ZENB Pasta Variety

Indulge in a rich, flavorful dish where umami-packed miso butter sauce meets the freshness of grated Beefsteak tomato, atop al dente ZENB Linguine made from 100% whole yellow peas, finished with sesame seeds, nori, and green onions for an unforgettable dining experience.This satisfying dish is also a good source of protein and fiber.

INGREDIENTS

  • 8 ounces ZENB Linguine made from 100% Yellow Peas, uncooked
  • 2 tablespoons unsalted butter
  • 1 tablespoon miso paste
  • 1 large Beefsteak tomato, stemmed, grated
  • 1 teaspoon toasted sesame seeds
  • 1 sheet nori, cut into thin strips
  • 1 green onion, thinly sliced

INSTRUCTIONS

1.

Cook ZENB Pasta as directed on package. Reserve 1/4 cup of pasta cooking water; drain.

Melt butter in large skillet on medium-high heat. Add miso; cook 30 seconds, stirring frequently until smooth. Add reserved pasta water, pasta and grated tomatoes. Cook, stirring occasionally until sauce is slightly thickened.

3.

Sprinkle with sesame seeds, nori and green onions before serving.

Tasty Tips

Miso paste is a Japanese fermented soybean paste that adds deep umami flavor to soups, stews, marinades and dressings.

Miso is available at your local Asian market or online.

Use a box grater or the shredding blade of a food processor to grate the tomato. Selecting firmer tomatoes makes the grating step easier.

Substitute 1-1/2 cups canned crushed tomatoes for the freshly grated tomato.
