Recipe Directions

1. Place almonds, parsley, 3 tablespoons lemon juice, 1 clove garlic, 1 teaspoon salt, cayenne pepper and seaweed in a food processor. Process the hell out of it. You can make it chunkier if you want, but chop the garlic first--you don’t want to bite into that!

2. Stir in celery and green onions. Set aside.

3. Place pine nuts, avocado, 1 tablespoon lemon juice, 2 tablespoons apple cider vinegar, 1 teaspoon salt, dates, 1 clove garlic, and spices in the food processor. Blend it like you never blended before. It becomes really smooth and creamy.

4. Mix 1/2 of the mayonnaise with the almond mixture. You can add more if it’s too dry. 

5. Take a big collard leaf and spread some of the mayonnaise in the center. Add as much of the "tuna" as you like.

6. Top with sliced avocado, sliced tomato, mesclun greens or sprouts, raw black olives, and freshly cracked pepper. You can sprinkle a little salt on the collard if the mixture isn’t salty enough also.

7. Roll it up, cut it in half, and try not to stuff it all into your face at once!

This is so good if you’re one of those who can’t seem to eat enough.

I make enough of this to have sandwiches for several days because I can’t seem to get tired of eating it!

Wrapping it in collards seems to make it easier to eat (much bigger than romaine and with much less water). You can make giant sandwiches with it!

For an extra delicious tuna salad: I marinated some sun-dried tomatoes for a day in olive oil, apple cider vinegar, and Italian spices, chopped them, and added about 1/4 cup when I mixed my mayonnaise with the tuna. It rocked.

I just made this. I couldn't get the almonds to break down. So, I added a tablespoon of rejuvelac. It worked. This is pretty good! I had kelp and this was pretty good. I thought it had a lot of ingredients. Thank God I keep most everything on hand. Bummer I only had 1/2 cup of pine nuts and had to cut the dressing in half. To the market tomorrow I go! I had enough for my hubby and I to have several "mock tuna". He had his on onion bread from this site and I had mine on cabbage roll.

FANTASTIC! This is one of the best raw sandwiches I have had! It was really easy to make, and even after eating a huge sandwich, I still have enough left for two more sandwiches. As of today, this is a staple of my raw diet. And it's portable and not too messy! Thank you! Thank you!!!!

Wow, this is the first mock tuna mayo recipe I've made and it really does taste like the real thing! I made a batch for my lunchover the next few days but already eaten a fair amount as couldnt resist! Thanks muchly.

I copied several tuna recipes a few weeks ago but this one sort of caught my eye - while waiting for my raw food students to arrive for class (I had about 20 minutes) I decided to make the tuna - I could not stop eating it - I actually put it on blue chips - I used to be a big tuna fan - I can trully say I will never miss tuna again with this recipe - I think I will try dehydrating for a tuna steak !!!!

Thank you for posting this delicious recipe. I ran out of seaweed - so I did without. And I sub'd carrot pulp for half of the almonds. Crazygood.

Oh my gosh, this looks delicious! I'm not a fan of Nori, do you think it will turn out good anyway?? I hope so! This photo looks amazing. I wish i could reach in the computer and take it out (of course, that wouldn't help since i'm on my 3rd day of the Master Cleanse :)

Thanks so much, I was looking for a mock tuna salad recipe & came across this one, which looks much better than I imagined. Your other recipes look & sound great! I'm also from a small town...very small & country...so I know what you mean about people not understanding the raw diet. Everyone tells me I'm going to get sick. ??? Those poor souls.

My guy and I LOVED these! We are in complete agreement that these are very, very filling....and taste so great you'll want more. Had to make some substitutions for the mayo, I used kumba for the seaweed, and I also added the sun dried tomatoes. This is one of the best raw recipes we've tried so far. Very easy to make, and was great the next day, too.

this is definitely delicious... and very filling! which is too bad cuz my mouth doesn't want to stop eating it lol. and the avocado mayonnaise Does taste just like mayo... better actually! its true that its a lot of fat but it hits the spot if you have a craving. thank you!

I should have soaked the almonds awhile before attempting to grind the "tuna" mix in my little food processor....but 1/2 later I had it all done, my meat-loving husband liked it a lot and my daughter begged for the recipe. PLUS.....this was my first introduction to a large, uncooked collard leaf, Since then I've been thinly slicing the collard leaf, massaging with lemon juice, olive oil, salt and red pepper and it makes the most amazing base for other salad mixtures, as well as by itself. Thanks again !!!

O.k., this is probably more fat than I eat in a month, but so worth it! It was delicious. I didn't add the dates and used red dulse as the seaweed, but it still turned out great. Thanks so much!
