Ingredients
PIE CRUST
1 1/2 cups walnuts (soaked)
1/2 cup buckwheat groats (sprouted)
1/2 cup dates
1 tablespoon cinnamon
1 tablespoon agave or yacon syrup
Salt
Flax oil
ICING/FILLING BASE
2 cups macadamia nuts
1 cup coconut meat
1/2 cup agave or yacon syrup
1 lemon (juiced)
2 tablespoons nut butter
Cinnamon
Salt
PIE FILLING
1 1/2 cups pumpkin
1 cup carrot (pulp or grated)
Coconut water
Recipe Directions
1. To make the crust, process crust ingredients in food processor. Place into dish.
2. Blend icing. Save 1 to 1 1/2 cups to ice the pie.
3. Add pie filling ingredients into icing.
4. Assemble.
