There have been a lot of lessons learned in North America regarding Listeria control in RTE products over the last three decades. In looking back at the large outbreaks, it's clear that that this is not limited to any one food sector. In fact, from 2020 to YTD, there have been 1055 recalls for FDA products and 347 for USDA-FSIS regulated products. So what can we do about it? There are books and articles and peer reviewed literature galore on this topic. Here are some tried and true basics to get you going, but this is by no means an exhaustive list. First and foremost, understand the ecology of the pathogen (hint - it's in dirt), and how it can find its way into your processing environment and into product. Cross contamination is the reason why grocery delis were cleared of product and completely cleaned and sanitized last month after the Boar's Head recall. Do you know where in your operation you have cross contamination potentials and are you mitigating effectively? Second, have a robust and "take no prisoners" Environmental Monitoring Program. What does that mean exactly? Swabbing the nooks and crannies and cracks and crevices. Stripping equipment down to its nuts and bolts and swabbing, then cleaning and sanitizing where no one has ever gone before. Randomizing the day, the time and the locations. Do your data include results up to the end of second shift? Do your data reflect all the days of the operational week? Are you capturing all the zones? And are you swabbing before the application of sanitizer? Hard to believe that this is still a thing, but it is. Third, have a robust Seek and Destroy team that has members from Ops, maintenance, sanitation, FSQ and anyone else with an eye for detail. Don't ever have any positives? Go back to step 2. Have occasional but rare positives? Conduct S&D not for cause exercises on a routine basis to keep the muscle memory alive. Have lots of positives? Dig deeper to get to the source and eliminate it. Fourth, train, observe, correct (if needed) and praise (where warranted). No one gets a pass on not doing the right thing from the janitor to the CEO. Fifth, spend time with your sanitation team for the entire shift, not just at preop. This does two things: ✔ it shows them that you care and that's what an organization with a strong culture of doing the right thing does. ✔ this may open your eyes to practices that are detrimental to your facility's success. Things like trash being taken out through edible storage areas because it's a shorter distance than taking it to the trash dock. Food safety is everyone's responsibility, and it is important to make sure you have established trainings and practice to maintain it consistently. “Why do I need to do ingredient testing, I already know what’s going into my product?” This is a question we get asked frequently and in theory, makes sense but ingredient testing is so much more than just knowing the ingredients you’re putting into your product. Let’s break it down in terms of risk assessment so an informed decision can be made. Known risks: ❔ Are your ingredients known to contain heavy metals or is that an emerging concern ala lead in cinnamon? ❔ Is your ingredient known to contain pathogens? ❔ Is there something in the FDA Hazards guide about the ingredient? Intended Product use: ❔ Who is the end consumer? Are they very young, old, immunocompromised? ❔ What in your process is addressing the known hazards? ❔ Are you applying a full lethality treatment or are you adding an ingredient after cooking that is known to be a bacterial risk?
