This delicious, homey soup is a meal in one.

Ingredients

Pizza Soup

  • 1–2 tablespoons oil

  • 2 onions, diced

  • 2 stalks celery, diced

  • 2 zucchini, diced

  • 2 carrots, sliced thinly

  • 1 jar thick marinara or pizza sauce

  • 1 can beans (pink or black beans work best)

  • 2 cloves garlic

  • 1/4 teaspoon basil

  • 1/4 teaspoon oregano

  • 1 tablespoon salt

  • 2 tablespoons Haddar Brown Sugar

  • water, to cover

  • 1 cup small pasta such as Gefen Orzo or ditalini

  • shredded cheese, for sprinkling

Directions

1.

In a large pot, heat oil and sauté onions and celery for 10 minutes.

2.

Add the rest of the ingredients except pasta and cheese and bring to a boil.

3.

Simmer for two hours.

4.

Add pasta and cook for an additional 10 minutes, stirring occasionally to prevent burning.

5.

Add cheese and serve.
