This classic salad is given a Middle Eastern spin with crushed pita chip croutons and a sumac dressing. Sumac is a burgundy-colored spice that lends a lemony punch to the dressing. It’s also great for meat rubs, hummus toppings, and roasted vegetables. Recipe developed with Sarah Goldstein.
4 cups thinly sliced lettuce
1 English cucumber, cut into chunks
6 ounces cherry tomatoes, halved
6 ounces radishes, trimmed and quartered
1 small red onion, thinly sliced
1/4 cup finely chopped fresh parsley and mint (optional)
1 cup pita chips, lightly crushed
3 tablespoons Tuscanini Extra-Virgin Olive Oil
2 tablespoons fresh lemon juice
1/2 teaspoon lemon zest
1 teaspoon ground sumac
1 teaspoon Gefen Honey
1 teaspoon Haddar Dijon Mustard
1/2 teaspoon salt
Whisk dressing ingredients together and set aside.
Combine lettuce, cucumbers, tomatoes, radishes, onion, and herbs in a large bowl.
Toss with dressing and sprinkle with crushed pita chips just before serving.
