- EggThe following recipe tastes so good – you will want doubles. And being that it is so low calorie you can take doubles guilt free!
1 package Beleaves Riced Cauliflower
1 cup Haddar Egg Whites (6 extra large egg whites)
1 extra-large Vidalia onion
1/3 cup oil
2 tablespoons Manischewitz Potato Starch (or flour, if making during the year)
2 teaspoons garlic powder
1 teaspoon salt
pinch black pepper
Heat oil in pan. Dice onion and sauté for about 10 minutes. Add salt.
Add bag of riced cauliflower to pan and sauté for another 10 minutes.
Remove from fire and mix with egg whites, starch (or flour), and spices.
Pour into greased muffin tins.
Bake on 325 degrees Fahrenheit for 40 minutes.

have you tried making this like a kugel instead of mini muffins?
I personally have not tried it, but I think it would work. You may just have to adjust the cook time.

egg whites about the egg whites-does it have to be Haddar, or can it be fresh ones? If so, how many?
Each carton of egg whites has an equivalent written on it. It depends on size. A cup is about eight egg whites.
I made these last year and they will be a permanent addition to my Pesach menu!
