While I wasn't able to find a cliente willing to do a project using Quest VR I already created a prototype rollercoaster VR game using the Oculus sdk asset for Unity. I excell at analysing code and then making modifications, so I believe that it is possible to disable, or at least mitigate the effects of, recentering when using hand controls.
