Arduino Mega 2560 High Power LED Controller

I'm building a high powered LED fixture for an aquarium. I will be using around 300W of high powered LED lighting. There are 11 different colours of lights which will require 11 separate channels of PWM control.
This will be built with;
- Arduino Mega 2560
- ITDB02 3.2" TFT Mega Compatible (No shield required)

- a light sensor for reading and displaying the light intensity
- multiple thermal probes for monitoring and displaying temperatures of the LED heatsinks and dimming or shutting the LEDs off if the temperature is too high.
- Real Time Clock module
Features are to include;
Sunrise/sunset cycle
moon phase cycles for night time mode.
manual dimming control of various channels
weather simulation such as a cloudy day
PWM fan control that will control the speed of a few PWM fans as the heat increases on the heatsinks.
Basically what I'm looking for are the features and functions of the CORALUX "Storm X LED Controller" with the interface of the Jarduino Controler 1.3 (Shown in the image attached).
The Storm X arduino sketches are downloadable from the website as the "firmware"
