Been thinking of this character a lot.

This is a character that I imagined being with Freddy all the time when it came to working a job, he's a type of ferret from New Jersey at the far eastern coast of the US, carrying with him an Italian ferret bloodline and a similar newfound passion for cooking just like Freddy. 

I thought of some names to give this guy, but first I came up with a fitting last name called "Mattino", which is Italian for "morning" and it's a word I hear a lot in Italian prog songs, I was going to name him "James" but Eternal-Ferret already has an OC named that, so alternatively I'll just call him "Michael".

He and Freddy both met at culinary school, and they soon became very trusting friends, like the kind who would sit close to a bonfire in the alleyway and exchange personal life stories together. So once Michael got out, he right away started his own business called "Mattino's", and Freddy *Works* there as Michael is the working manager (meaning he cooks while he's running the restaurant).  It's also more than just a pizza shop, it serves many other kinds of creative dishes like what you would see on the TV show Chopped.

So when Freddy went around looking for work after he has experimented with multiple part time jobs, and still needed a place where he can survive financially, he discovered Mattino's, and found the name familiar, so as he went inside to look for an application, Michael recognized Freddy and he hired him on the spot, he gave Freddy the job after writing his name.

In some days when Freddy has his time off, any time he stops by Mattino's to have lunch, Michael would offer him slices of free pizza. So that is a brief description of my new character.
