Where are my blocks when using custom post template?

Hi,
I am new to using blocks but I’m trying to update my website. I was using Advanced Custom Fields before to create custom posts and pages with pre-defined content fields.
Using “Appearance > Editor > Templates” I have added a Custom Post Template. I have added some blocks (Title, Gallery, Content). When I create a new post using this template or swap an existing post to this template, I expect these blocks to appear so I can fill them with information.
However, the editor is blank and I have to start by adding new blocks. When I preview the post, I can see that my pre-defined blocks are being added at the bottom of the post with exactly the content I gave them in the template editor.
What is the point of the template if my pre-defined blocks don’t appear for editing?
Am I missing the point of these templates?
I just want to have pre-defined blocks so that I can easily add the correct title, images and text for each post using that template (just like with ACF before).
I created a child theme based on twenty twenty-three, but I am not sure that is even relevant at this point.
