i.e. if we sing an Ave Verum, I'd like to easily be able to insert "Words/translation available at NEH:XXX, Hail, true body" by selecting it from a list.

Keep anthem title and composer. But for anthem words, perhaps a toggle for "anthem in hymn book [yes|no]". yes lets you pick which hymn it is drawn from and automatically inserts some text, no lets you freeform write.
