Description of your changes

This PR manually bump the version of the layer in the doc to match the one published against latest version of Lambda PowerTools (1.2.1) https://github.com/awslabs/aws-lambda-powertools-typescript/actions/runs/3221623894.

It also fix the layer bundling.
