The Categories List block customisability is very limited as it's classified as a widget with the assumption that it will be used in a sidebar or footer. It'd be cool if it would allow users to customise more, for example, by displaying it as an inline list with a customisable separator.

You could manually make it using the paragraph blocks, but obviously, it won't be dynamic.
