Although the code hasn't been merged for the AWS TF provider yet, I just wanted to create an issue to track this new feature in the upstream provider:

hashicorp/terraform-provider-aws#16132

After the above PR is merged, I can take a stab at creating a PR for this module to add support for protocol_version.
