I'm not sure if this is possible, from a quick search it seems the subtitle is baked into the media when the client receives it. If someone can show me a method of getting the subtitle through the Plex API, then I would be willing to create a feature in PlexRipper for downloading subtitles.

Looking at the response in /library/metadata/<metadata-key>, it looks like the subtitle streams are reported there (under Video/Media/Part/Stream) including a download link at /library/streams/<stream-key>. That URL provides the raw subtitle contents (e.g. SRT).
