Some application deployment roles still utilize Monaco V1 for DT configs, which may be outdated.
Upgrade them to Monaco v2 and also streamline the default configs for the app roles such as EasyTravel, hipstershop, etc.

EasyTravel and EasyTrade currently do not have working monaco config

EasyTrade config works and has been resolved through #733
