Which series Watch can I purchase that will work with an iPhone X? I have tried Watch Series 6 but it won’t pair. Or am I out of luck? Thanks in advance.

Any unit on a watchOS version below 10.0.

The Series 3 and earlier units have a maximum OS below 10.0.
The Series 9, Ultra 2, and any future model will always be on 10.0 or above.
For any other, it depends on the specific unit; in general, ones which have been in storage for a while or rarely used since purchase are more likely to be on a compatible version.
