I’ve started the backup 2 years ago when I bought my iPhone and then the backup got stuck.
if I click on ‘’stop restoring iPhone’’ will I loose the information on my previous backup and all the photos ecc I’ve collected in this 2 years?

A 2 year old iCloud backup would no longer exist. Do you mean that you haven't backed up in two years? That's not a good practice. If you're restoring your phone, any photos not backed up are already lost as part of the restore process.
