How do I shortcut my email address to my keyboard?

Go to the System/Keyboard/Text Replacements and create a new text replacement like this:
It'll work like this:
You'll need to hit the space bar once after the xem to get the address.

This works fine when using it in a text message, etc. But if you want to enter it into a form requesting an email, it won't work. I'm assuming that in this process the form/site/login is expecting an email, not a short text label that converts to email looking text. Why can I not just make it a keyboard function using , say F19 ??

You can try using a macro app like Keyboard Maestro. One can program an F key or key combination (like Control+e) to enter the email address.
The App Store has a number of macro apps, some free and some with in app purchases. I use KM as it's the most powerful of the macro apps and can do just about anything you can do with a programmed key combination.
Go to the App Store and search for "macro".

I got the answer. It's in System Settings - Keyboard - keyboard shortcuts - use short word and then 'replace with' type the email. done.
