and as mentioned in the post, I have initiated a restore which did not work, probably because whilst the data itself is fine, the restore will not allow you to go back to the previous IOS version, per the apple release notification.

Please also think about the fact that the phone was working fine immediately prior to the update but not after, and thus the cause of the issue points to the update to 17.5.1. hence my pointed question about the IOS not the device.

I’ve just had the same thing happen to my iPad Air (4th gen). Put it on charge last night and it updated to the 17.5.1. Took it off charge this morning and tried to unlock my iPad but the touch screen wasn’t working. Phoned up Apple Support and they had me force restart it whilst on charge and off charge and nothings working. I’m also going to try and see if I can get it sorted when I plug it into my Mac later.

It's not always the iOS update's fault!  Many things can cause phone problems.  If you tell people you think it's an iOS update, it might make it harder to fix or find a solution for the real issue.

Remember, the right question often leads to the solution! Please look in the right direction.

iOS updates aim to enhance user experience, boost security, and fix bugs rather than disrupt core features. The majority of the issues after updates might stem from underlying, unmentioned factors. Updates won't typically alter personal data but may refine settings or features. Backup before major updates for safety. Review Apple's update details and backup advice for a smooth process.

Kindly consider checking your settings and addressing any device issues before attributing the issue to external factors. This could be a pure coincidence that the iOS update affected the iPhone functions.

Before initiating a standard iOS update, it's advisable to create a backup. Have you completed this step? If yes, proceed with the restoration from the backup.

Im dealing with the exact same problem. 14pro max running 17.5.1 and the touch just stopped working. I have tried resetting the phone (Vol up Vol down and power) and factory restored it via apple devices and itunes app (didnt wanna leave any stones unturned lol) and I am still stuck. Upon speaking to tech support, I have been asked to bring my device in for a service appointment. I hope apple doesn't charge me for this or any replacement. My device is literally brand new (1.5years) with zero damages (0 cosmetic damages as well).

The funniest thing is I have switched to my Pixel 3XL and Ive had no issues with it at all.
